This is the dump-and-microwave casserole your mom made in the 1980s when she got home from work, and it still delivers when you need dinner on the table fast. The whole thing comes together in 25 minutes start to finish, all in the microwave.

The technique borrows from lasagna without the long oven bake: alternating layers of egg noodles tossed with cottage cheese and sour cream, ground beef simmered in tomato sauce, and a melted sharp cheddar top. Each layer adds creamy, tangy, or meaty notes that show up in every bite.

Microwaving ground beef seems wrong but it works for casseroles where the meat won’t be browned at the end. The microwave cooks the meat through evenly in six minutes without scorching, and the rendered fat drains off cleanly before you mix in the sauce.

The cottage cheese-sour cream layer is the magic. The two dairies combined give you that creamy, slightly tangy stratum that holds the noodles together and reads as ricotta without the higher price.

Kitchen Tips

  • Use a microwave-safe glass or ceramic casserole; metal pans don’t work and plastic can warp at the heat
  • Cook the egg noodles a minute shorter than the package directions; they finish cooking in the casserole and won’t go mushy
  • Sharp or extra-sharp cheddar gives the most cheese flavor; pre-shredded mild cheddar disappears into the top
  • The casserole can be assembled ahead and refrigerated; add 5 minutes to the microwave time to compensate for the cold start

Directions

Place meat in a medium-sized, heat-resistant, non-metallic mixing bowl.

Heat, uncovered, in Microwave Oven 6 minutes or until meat is browned.

Stir occasionally.

Drain excess fat.

Add salt, pepper, garlic salt and tomato sauce to the meat.

Stir to combine.

Heat, uncovered, in Microwave Oven 2 minutes.

In a medium-sized bowl, combine cottage cheese, sour cream, onion and cooked noodles.

In a 3-quart, heat-resistant, non-metallic casserole alternate layers of noodle mixture and meat mixture, starting with the noodles.

Heat, uncovered, in Microwave Oven 8 minutes.

Sprinkle grated cheese over top of casserole.
