Incredibly refreshing and tasty kiwi tomato salsa that is perfectly paired with Tilapia or any fish.

Ingredients

1 large tomatoes
freshly chopped
1 each kiwi fruit
peeled and chopped into cubes
1 small red onion
peeled and finely chopped
2 tablespoons parsley leaves
freshly chopped
½ each lemon
juice, freshly squeezed
1 x salt and black pepper
to taste

1 pound fish

Directions

In a medium bowl, gently toss tomato, kiwi, red onion, parsley, lemon juice, salt and black pepper to taste until well combined.

Excellent served on top of grilled or pan-fried fish or chicken.
