This vegetarian soup is a stripped-down, pantry-friendly bowl built from flour-thickened broth seasoned with soy sauce, sweet basil, and garlic. Onion gets sauteed in olive oil until soft, then flour and cold water create a smooth slurry that thickens into a light, silky base.

The soy sauce carries the flavor here, adding a deep umami backbone that makes this taste richer than its short ingredient list suggests. Sweet basil adds an herbal note that bridges the Asian and Mediterranean sides of the seasoning.

The soup thickens gently over medium-low heat without ever reaching a boil. That gentle approach keeps the texture smooth and prevents the flour from getting gummy or lumpy. Quick, comforting, and vegan-friendly.

Kitchen Tips

  • Stir the flour into the first cup of cold water before adding to the pan. Adding flour directly to hot liquid creates lumps that won’t dissolve.
  • Add the remaining water gradually, stirring as you go, for a smooth, even consistency.
  • Don’t let the soup boil. A gentle simmer thickens it properly. Boiling can break the flour suspension and make it watery.
  • Taste before serving and adjust the soy sauce. Different brands vary in saltiness.

Variations

  • Add a can of drained chickpeas (garbanzo beans) for protein and a heartier soup.
  • Stir in diced tofu or sliced mushrooms for extra substance.
  • Finish with a drizzle of sesame oil and a sprinkle of sliced scallions for more depth.
