Noodles Romanoff is one of those retro pasta sides that deserves way more attention. Hot egg noodles get tossed with butter, then folded into a tangy mix of sour cream, grated Parmesan, crushed garlic, and snipped chives. No oven, no casserole dish, no waiting.

The heat from the freshly drained noodles is what makes this work. It softens the sour cream just enough to coat every strand without cooking it into a broken, grainy mess. The butter goes in first so the noodles get slicked before the sour cream mixture folds in, keeping everything glossy and smooth.

Half the Parmesan goes into the sour cream mix, and the rest gets sprinkled on top at the end for a salty, nutty finish you can see and taste.

Kitchen Tips

  • Drain the noodles well but don’t rinse them. That starchy surface helps the sour cream cling. Rinsed noodles are slippery and the sauce slides right off.
  • Use full-fat sour cream. Low-fat versions break and get watery when they hit hot noodles.
  • Crush the garlic rather than mince it. A crushed clove releases flavor more gently and you won’t bite into raw garlic pieces.
  • Serve immediately. Sour cream sauces thicken as they cool and the noodles start to clump.

  • Add crumbled bacon on top for a smoky, salty crunch.
  • Stir in a cup of cottage cheese along with the sour cream for a more traditional Romanoff with extra creaminess.

Directions

Start by cooking noodles as package directs.

Stir together sour cream, half the cheese, chives, salt, pepper and garlic in a bowl.

Drain noodles and return to pan.

Stir in butter.

Fold in sour cream mixture.

Place on a serving platter and sprinkle with the remaining cheese.
