No Bake Peanut Butter Cookies

Ingredients

8 each graham crackers/wafers
squares, finely ground, whole wheat

¼ cup raisins, seedless
¼ cup peanut butter
smooth and natural
2 tablespoons honey
plus 2 teaspoons
6 teaspoons coconut, shredded, unsweetened (desiccated)

Directions

Mix together ground whole wheat graham crackers, raisins, peanut butter and honey in a small bowl.

Pat into 8 cookies and press lightly in coconut.

Serve and enjoy, 2 cookies per person.
