Mango Mint Salsa

Fruity, sweet, tangy and minty. This salsa make a perfect accompaniment with grilled or pan seared pork chops for a speedy weeknight dinner.

Directions
If you don't have fresh, frozen mango is already peeled and ready when you are. Use 1½ cups of thawed frozen mango swapped for fresh mango.
Combine the mango, olive oil, lime juice, mint in a small bowl. Add salt and fresh ground black pepper to taste.
Serve will pan-seared pork chops or fish. Also works well with black beans to make a salad.
