Fruity, sweet, tangy and minty. This salsa make a perfect accompaniment with grilled or pan seared pork chops for a speedy weeknight dinner.

Ingredients

1 each mangos
finely diced
2 tablespoons olive oil
3 tablespoons lime juice
juice from one good sized lime
1 each jalapeño pepper
seeded and finely diced

2 tablespoons mint leaves
fresh chopped
1 x salt

1 x black pepper

Directions

If you don't have fresh, frozen mango is already peeled and ready when you are. Use 1½ cups of thawed frozen mango swapped for fresh mango.

Combine the mango, olive oil, lime juice, mint in a small bowl. Add salt and fresh ground black pepper to taste.

Serve will pan-seared pork chops or fish. Also works well with black beans to make a salad.

Just like the description of the recipe. The salsa was so fruity, minty and refreshing. A great side dish, and I ate it with some oven baked whole wheat tortilla chips. Yum!
