This is a five-ingredient quick bread that earned its “Mama’s” prefix the honest way: someone’s actual mama made it on weekends with a box of Bisquick from the cabinet, a handful of walnuts, and whatever cherries were in the fridge. No yeast, no rise time, no kneading.

Bisquick handles the leavening, fat, and salt at once. That’s why the recipe looks impossibly short. The egg binds, the sugar sweetens, and the cherries and walnuts give every slice texture and color. Pour the batter into a greased loaf pan, bake an hour, slice. Done.

Quartering the cherries matters more than you’d think. Whole cherries sink to the bottom of the loaf and create a dense gummy layer; quartered cherries distribute through the batter and stay suspended.

The bread is dense, tender, and faintly cake-like, somewhere between a tea bread and a quick coffee cake. It slices best after cooling completely, and tastes even better the next day with butter on the cut side.

Kitchen Tips

  • Use maraschino cherries for the classic sweet-pink loaf, fresh pitted cherries in summer, or dried tart cherries for a more grown-up flavor. Each gives a different bread.
  • Toast the walnuts at 350°F (175°C) for 8 minutes before chopping. Toasted nuts hold their crunch through the long bake; raw ones go soft.
  • Test for doneness with a toothpick at 50 minutes. Ovens vary, and a dry toothpick means done. An hour can overbake a smaller loaf.
  • Wrap fully cooled loaf in plastic and let it sit overnight. The crumb tightens and slices clean instead of crumbling.

Variations

  • Swap walnuts for pecans for a softer, sweeter nut profile.
  • Add 1 teaspoon of almond extract to the batter for a cherry-pie flavor lift.
  • Drizzle a simple powdered-sugar glaze (1 cup powdered sugar plus 2 tablespoons milk) over the cooled loaf.
