Bisquick handles the leavening, fat, and salt at once. That’s why the recipe looks impossibly short. The egg binds, the sugar sweetens, and the cherries and walnuts give every slice texture and color. Pour the batter into a greased loaf pan, bake an hour, slice. Done.
Quartering the cherries matters more than you’d think. Whole cherries sink to the bottom of the loaf and create a dense gummy layer; quartered cherries distribute through the batter and stay suspended.
The bread is dense, tender, and faintly cake-like, somewhere between a tea bread and a quick coffee cake. It slices best after cooling completely, and tastes even better the next day with butter on the cut side.
