Homemade banana chips fried crisp, then tossed in coconut treacle, sugar, and cinnamon for a sticky-sweet snack. A Sri Lankan twist on crunchy fried banana with warm spice in every bite.

40 minBanana chips don’t have to come from a bag. Slice firm bananas thin, give them a quick dip in lemon water to keep them from browning, then fry until the edges curl and crackle.
The finish is what sets these apart: a glossy coat of coconut treacle, sugar, and warm cinnamon that turns plain fried banana into something sticky and toffee-like.
Coconut treacle is a Sri Lankan syrup similar to molasses, so if you can track it down you get a smoky, caramel depth that regular sugar can’t match. The lemon-water soak does double duty here, brightening the flavor while it stops the slices from oxidizing as they wait their turn in the oil.
Thin, even slices are the trick: cut them around ⅛ inch so they crisp all the way through instead of staying chewy in the middle.
Kitchen Tips
- Use a mandoline for even ⅛-inch rounds that fry at the same rate.
- Drain the slices completely before they hit the oil or it will spit and steam.
- Bring the treacle, sugar, and cinnamon just to a boil, then toss the chips quickly so they coat while the syrup is still glossy.
- Cool the chips fully before storing in an airtight jar, otherwise trapped steam turns them soft.
Variations
- No coconut treacle? Regular molasses or maple syrup both work for the glaze.
- Add a pinch of cardamom or a whisper of chili powder for a sweet-heat finish.
- Swap in plantains for a sturdier, less sweet chip that holds its crunch longer.

In a small dish, add water and lemon juice, mix well.
Peel and thinly slice banana about ⅛ inch.
Place banana slices in lemon juiced water.
After 2 to 3 minutes, drain out water completely.
Heat oil, deep fry the banana slices until they are crispy.
Remove slices and cool.
Then in a thick-bottomed pan, add coconut treacle (treacle is brown in color and similar to molasses), sugar and cinnamon powder, bring to boil up to 100 cup degrees (use a thermometer).
Then add the treacle mixture to the banana and mix well.
Serve and enjoy.
