These Sri Lankan-style fried bananas transform ordinary ripe fruit into a tropical dessert with butter-caramelized edges, a glossy sugar glaze, and crunchy toasted coconut on top.

The magic happens when sugar melts into the pan drippings, creating an instant caramel that coats each banana slice in golden sweetness.

A drizzle of vanilla and sprinkle of chocolate candy add the final flourish, while a dollop of cool yogurt cuts through the richness.

Kitchen Tips

  • Use ripe but firm bananas - overripe ones will fall apart during frying
  • Watch the sugar carefully as it caramelizes quickly and can burn
  • Toast coconut in advance in a dry skillet until golden and fragrant
  • Serve immediately while bananas are warm and caramel is fluid
