Fight evil and help those who are hungry with this scrumptious casserole that is sure to produce a happy ending.

Ingredients

6 ounces egg noodles
medium
2 tablespoons butter
1 can cream of mushroom soup
1 cup milk
½ cup sour cream
½ teaspoon salt
½ cup onions
finely chopped
¼ cup pimentos
sliced
½ cup green bell peppers
finely chopped
1 cup celery
chopped
6 ½ ounces tuna fish
drained and flaked
15 crackers, cheese flavored
broken but not crumbled

Directions

Cook the noodles in salted water according to package directions, drain, toss to coat with 1/2 of the butter and set aside.

Preheat oven to 400℉ (200℃) F.

In a large saucepan, melt the remaining butter and sauté the onion, pimiento (or red bell pepper), green pepper, celery and salt for about 5 minutes. Add the milk, sour cream and cook over low heat for about 5 or 10 minutes, stirring frequently.

Add the tuna and noodles. Stir to combine and transfer into a suitably sized casserole dish. Sprinkle top with ritz crackers. Bake 20 to 25 minutes.

Garnish with parsley before serving. Makes enough for 6 hungry folks.

Note:

An additional 3 ounce (185g) can of tuna can be added for a meatier casserole.
