30 minAnyone who’s made grits on the stove knows the drill: stand there stirring, dodge the volcanic bloop of boiling cornmeal, then scrub the scorched pot after. This version skips all of that by leaning on the microwave, which turns out to be a genuinely smart way to cook grits into something creamy and smooth.
The trick is gentle, patient heat. Cooking at half power in short bursts, stirring between each, lets the grits soften evenly without boiling over or catching on the bottom. You just repeat until that grainy texture disappears and they turn silky.
A good handful of cheese stirred in at the end melts into Southern-style comfort, while garlic salt seasons the whole pot. Let them stand about ten minutes before serving, since that rest is when they thicken to a rich, spoon-coating creaminess.
Kitchen Tips
- Cook at 50% power in short bursts and stir between each; that gentle, repeated heating is what stops grits from boiling over or scorching.
- Stop when the texture turns fully smooth with no graininess left; that’s your doneness cue.
- Let them rest about ten minutes before serving, since they thicken and the cheese melts fully as they sit.
Variations
- Spoon them under shrimp for classic shrimp and grits, or top with a fried egg and hot sauce.
- Swap the garlic salt for a pinch of cayenne, or stir in sharp cheddar, pepper jack, or Parmesan.
Ingredients
3 3/4 cups water
1 cup instant grits
1 tsp garlic salt
3/4 cup cheese of your choice - cheddar or american work very well
Directions
Combine water, grits, and garlic salt in a 6-cup microwaveable dish. Cover and microwave at 50% power for 3 to 4 minutes. Stir and repeat until the grits are a smooth texture. There should be no “graininess". Expect to repeat the stirring and microwaving process 3 to 4 times more. Stir in cheese and allow to cool at least 10 minutes before serving. It will still be warm.
