60 minBeef and Cabbage Joes are the smarter cousin to standard Sloppy Joes, the one that sneaks two cups of shredded cabbage into the mix and somehow makes the dish better. The cabbage softens into the sauce, picks up the tang from the ketchup and mustard, and stretches one pound of ground beef into eight generous sandwiches.
This is a recipe that looks unassuming on paper but cooks into something more layered than the sum of its parts. Twenty-five minutes of covered simmering breaks the cabbage down into a sweet, tender vegetable that disappears into the sauce. The result is messier than diced cabbage in a slaw and friendlier on the palate.
Drain the ground beef well after browning. Excess fat in this kind of saucy mix turns greasy fast, and the sauce should coat the meat without pooling at the bottom of the pan.
The mustard is the crucial detail. A tablespoon of prepared mustard cuts the sweetness of the ketchup and adds the savory edge that distinguishes a Sloppy Joe from a sweet meat sauce. Use yellow mustard for tradition or Dijon for a slightly more grown-up version.
Toast the buns. Soft buns turn into mush under the wet filling, while toasted ones hold their structure long enough to be eaten with both hands.
Pro Tips
- Use 80/20 ground beef rather than leaner. The fat carries flavor and contributes body to the sauce. Lean ground beef produces a watery, less satisfying mix.
- Shred the cabbage finely. Coarse strips take longer to break down and stay chewy in the final dish.
- Add a tablespoon of brown sugar if your ketchup runs sharp. Some brands need the boost; others do not.
- Make ahead and reheat. Like all braised dishes, this version improves overnight as the flavors meld.
Variations
- Use the recipe note: omit the cabbage and salt for a traditional Sloppy Joe.
- Add a teaspoon of smoked paprika and a dash of Worcestershire for a deeper, smokier savory edge.
- Stir in half a cup of crushed pineapple for a Hawaiian-style sweet-savory twist.
Ingredients
Directions
Cook and stir the meat, onion and celery in a large skillet until the meat is brown. Drain off the excess fat. Stir in the cabbage, green pepper, catsup, water, salt, and mustard and heat to boiling, stirring occasionally.
Reduce the heat and cover. Simmer until the vegetables are tender, about 25 minutes. Spoon the mixture onto the bottom halves of the buns and top with the remaining halves.
NOTE:
For Sloppy Joes, omit the cabbage and salt.
