Easy Breakfast Tortilla Pizza

This quick, easy and delicious tortilla pizza is made with whole wheat tortilla, basil pesto, fresh vegetables, pickled jalapenos and mozzarella cheese. Perfect for breakfast or brunch.













Low Fat, Fat-Free, Low in Saturated Fat, Low Cholesterol, Cholesterol-Free, Trans-fat Free, Low Carb, Low Sodium


2 flour tortillas, whole wheat
2 tablespoons basil pesto
2 mushrooms, button
or cremini, sliced
½ green bell peppers
sliced, or poblano pepper
2 artichoke hearts
marinated, drained and sliced
2 tablespoons pickled jalapenos
drained and sliced
¼ red onion
peeled and thinly sliced
2 garlic cloves
peeled and sliced
salt and black pepper
to taste
1 cup mozzarella cheese
red hot pepper sauce
for serving, or any hot sauce, optional


Preheat oven to 450℉ (230℃).

Place two whole wheat tortillas onto a large baking sheet. Spread 1 tablespoon basil pesto on each tortilla. Place remaining toppings over pesto. Sprinkle cheese over toppings.

Bake for about 10 minutes or until cheese melts and edges of tortillas become slightly brown. Let cool for a few minutes and serve warm with hot sauce if needed.

Another lazy but tasty dish :D This is the kind of food I make when I feel too lazy to do anything complicated.

Used store-bought whole wheat tortilla, spread with some store-bought basil pesto, topped a few slices of mushrooms, strips of green bell peppers, marinated artichoke hearts, and some red onion. Then sprinkled some mozzarella on top.

Then bake for about 10 minutes, my pizza was ready for me to dig in, and it tasted great with much less calories and fat than a regular pizza.

I was totally happy with my healthy choices :)
