Ingredients

¾ cup onions
chopped
3 tablespoons chicken broth
de-flated
2 cups tomatoes
fresh, pureed
1 teaspoon basil
sweet

1 medium garlic cloves
pressed

¼ teaspoon black pepper
coarsely ground
*
10 ½ ounces silken tofu
drained

Directions

In a medium saucepan, sauté onions in chicken stock until transparent.

Add puréed tomatoes along with next three ingredients.

Simmer for 10 to 15 minutes.

In a blender or a food processor, process tofu until smooth and stir into the tomato mixture.

Simmer and serve hot.
