Creamy Squash, Apple, and Corn Bisque recipe













Trans-fat Free, Very low in sodium, Low Sodium


1 pound butternut squash
peeled, seeded and finely chopped
3 each Granny Smith apples
peeled, cored, finely chopped
3 tablespoons butter, unsalted
3 medium leeks
rinsed well and sliced
1 clove garlic
4 cups vegetable stock
1 ½ cups corn
6 tablespoons heavy whipping cream
¼ teaspoon nutmeg
freshly grated
1 x pepitas (pumpkin seeds)
to serve, optional


Over medium heat, sauté the squash and apples in the butter for 5 minutes, stirring occasionally.

Add leeks and garlic and sauté another 5 minutes.

Add the broth and corn and simmer 10 minutes.

Stir in the cream and nutmeg and heat just until warmed through.

Sprinkle with the toasted pumpkin seeds if desired.
