Ground beef, barbecue sauce, sliced potatoes, and melted cheddar pile onto pizza dough for a hearty cowboy pizza the whole family will demolish. Ready in about an hour.

60 minSaddle up, partner. This cowboy pizza takes everything you love about a loaded baked potato and a sloppy barbecue burger, then smashes them together on a pizza crust.
Microwave-tender potato slices, seasoned ground beef swimming in tangy barbecue sauce, strips of green pepper, and a thick layer of melted cheddar all bake up on store-bought pizza dough until the cheese is bubbling and the crust turns deep golden brown.
It’s rustic, it’s filling, and it disappears fast. Cut into 8 wedges and watch them vanish before you sit down.
Chef Tips
- Use lean ground beef and drain the fat well so the crust stays crisp underneath
- Slice potatoes no thicker than ¼ inch so they cook through in the microwave without turning mushy
- Swap cheddar for pepper jack if you want a little kick
- Brush the exposed crust edges with olive oil before baking for extra color and crunch

Directions
Heat oven to 425℉ (220℃).
Place potatoes in shallow 1½- to 2- quart microwave-safe dish.
Cover with plastic wrap, venting one corner.
Microwave on HIGH 8 to 10 minutes until just tender; set aside.
Coat 12-inch round pizza pan with vegetable cooking spray; press dough evenly into pan; prick all over with fork.
Bake for 10 minutes; set aside.
Meanwhile, in large nonstick skillet over medium heat sauté beef until browned; drain fat.
Mix in ¾ cup barbecue sauce.
To assemble pizza, spread beef mixture over crust; top evenly with potatoes and bell pepper.
Drizzle with remaining ¼ cup barbecue sauce.
Sprinkle with cheese. Bake 10 to 15 minutes until hot throughout and cheese is melted. Cut into 8 wedges. NOTE: Microwave cooking times are based on a 700-watt microwave. Adjust cooking times to your own oven.
