Grab any flavor of boxed cake mix, beat it together with eggs, margarine, flour, and milk, then drop spoonfuls onto a cookie sheet and bake until the edges turn golden. That’s the whole recipe.
Chocolate cake mix becomes rich fudge cookies. Lemon becomes bright citrus drops. Red velvet, funfetti, spice cake... they all work.
The cookies come out soft, pillowy, and slightly cakey with browned, slightly crisp edges.
Variations
- Lemon cake mix: Add ½ teaspoon lemon extract for a stronger citrus punch
- Chocolate cake mix: Fold in a handful of chocolate chips or white chocolate chunks
- Funfetti cake mix: Roll the dough balls in extra sprinkles before baking
