Directions
It is possible to make this recipe in either an full-sized oven or even single serving in a toaster oven.
Set oven to 400℉ (200℃).
Lay the bacon slices onto a small baking pan and bake at 400℉ (200℃) in the oven or toaster oven until partially cooked but still quite pliable. Remove to paper toweling to drain.
Coat chicken breasts with the olive oil, season with the salt and black pepper and place on a rimmed baking sheet.
Top each chicken breast with tomato slices and the basil then wrap the bundle up with 2 slices of bacon for each breast forming a cross or X.
Bake at 400 degrees F, uncovered for 20 to 25 minutes until cooked through. For the juiciest results use an instant-read thermometer and bake until the thickest part of the chicken reads 165 degrees F.
Top with shredded or sliced mozzarella cheese and return to the oven to melt the cheese, about 1 minute.
Serve.
