I used durum wheat flour instead of semolina. Barney unplugged my machine, so I had to finish the second rise, and bake it in the real oven. It turned out great. This bread is not sweet, it has almost a “sour” taste. Holds up nice for sandwiches. I’ll make it again.

Directions

Bake according to manufacturer’s instructions in your bread machine. Generally this is add the wet ingredients, add the dry ingredients and press “Start”

Semolina flour has a very high gluten content, and therefore makes an exceptional loaf.

Expect a yellow-tinted interior and a well-developed wheat flavor.

Why are the quantities of yeast and other dry ingredients broken down into two portions in the ingredient list?

It looks to me like 2 different size of loaves. Different amounts of ingredients.

Usually this is for regular and large loaf size, start list with water and end with yeast.

can we substitute bread flour for all purpose flour?

We will see how this turns out, but initially the dough was super dry and I had a add water. Now it is in machine, but it is having a hard time mixing the dough. Really tough dough.
