Blanched Sugar Snap Peas

Sugar snap peas are a sweet and crispy cross between snow peas and garden peas. This technique for blanching ensures your peas stay bright green and perfectly tender crisp.

Ingredients

1 teaspoon salt
1 pound sugar snap peas
about 4 cups

Directions

In a medium pot, bring 6 cups of water to the boil. Meanwhile prepare a large bowl of ice water to shock the sugar snap peas, locking in the color and to prevent over-cooking.

Add the salt and peas to the boiling water and cook until tender-crisp.

Using a slotted spoon transfer the sugar snap peas to the ice water. Drain and pat dry.

The sugar snap peas can be prepared this way up to an hour in advance for use in another recipe.

If you boil them for 5 minutes, they will be mush. Boil for 1-2 minutes. I usually check after 1 minute. I blanch them often for a salad that I make.
