Apple cranberry pork roast: pork slow-cooked over onions and apples in a spiced, sweet-tart cranberry sauce until fork-tender. A cozy, hands-off fall Sunday supper from the crockpot.

This is the slow cooker doing what it does best: turning a pork roast and a few humble fall ingredients into a tender, fragrant Sunday supper with almost no effort. Sweet apples, onions, and tart cranberries cook down around the meat into a glossy, sweet-savory sauce.

The layering is the smart part. Onions and apples go on the bottom, where they soften and melt into the cooking liquid, while the pork sits above them, staying moist and basting in the rising steam. A spiced sauce poured over ties the apple-cranberry sweetness to the savory meat.

Cook it just until the pork is fork-tender, which depends on whether you’re using a roast or chops, then let it rest before slicing so the juices settle. Spoon that fruity sauce generously over the top, and serve with mashed potatoes or roasted vegetables to soak it all up.

Kitchen Tips

  • Put the apples and onions on the bottom; they break down into a sauce while keeping the pork moist above them.
  • Cook just until the pork is fork-tender; timing depends on the cut and size, so check rather than overcook.
  • Let the roast rest before slicing so the juices redistribute instead of running out.

Variations

  • Use fresh or dried cranberries, and a firm apple like Granny Smith that holds its shape.
  • Add a splash of apple cider or a pinch of cinnamon and sage to deepen the fall flavor.

Ingredients

pork roast or chops
1 tsp sage leaves
1 tsp minced garlic
1 tsp thyme leaves
1/2 tsp ground allspice
1/2 tsp paprika
1 can cranberry sauce (with whole cranberries)
1 tsp soy sauce
4 apples, quartered, cored
3 onions, halved

Directions

Place onions and apples in bottom of crockpot.

Add pork.

In bowl combine spices and sauces. Pour over pork.

Cook on high 4 to 6 hours depending on the size of your roast / chops until cooked through.
