4 hrsStrawberry daiquiri pie turns a frozen cocktail into a chilled no-bake dessert that anchors any summer cookout or backyard party. Cream cheese and sweetened condensed milk form the silky, custard-like base, while strawberry daiquiri mix and light rum deliver the cocktail flavor. Folded whipped cream lightens the whole thing into a pink, mousse-like filling that sets up firm in the freezer.
The base technique is the same one used for every classic icebox pie: beat softened cream cheese smooth, then gradually beat in the sweetened condensed milk for a custard-like base that doesn’t need cooking. Adding the daiquiri mix and rum next thins it into a pourable consistency before the whipped cream gets folded in.
Freezing or chilling the pie is the recipe’s choice; both work but produce different textures. Frozen gives you ice-cream-pie firmness that holds clean slices and stays cold during a hot afternoon. Chilled gives you a soft, mousse-like cut that’s lighter and more delicate. For poolside parties or July weather, freeze. For dinner-party plating, chill.
The rum is optional but adds proper daiquiri character. Skip it for a kid-friendly version and the flavor profile shifts toward strawberry mousse pie rather than cocktail-inspired.
A graham cracker crust is the classic pairing, but a baked pastry shell gives a more refined edge if you’re entertaining.
Pro Tips
- Use fully softened cream cheese, even small cold lumps refuse to smooth out in the filling
- Whip the cream to stiff peaks separately and fold in gently to preserve volume
- If freezing, let the pie sit 10 minutes at room temperature before slicing for cleaner cuts
- Garnish with sliced fresh strawberries just before serving so they don’t bleed color
Variations
- Make a lime daiquiri pie by swapping the strawberry mix for limeade plus a few drops of green food coloring (the recipe writer’s own variation)
- Top with shredded toasted coconut for a tropical lean
- Sub pina colada mix and add a teaspoon of coconut extract for a colada version
