A garlic bulb is the whole head: the papery white knob you buy at the store, made up of a dozen or so individual cloves packed around a central stem. Pull it apart and each segment is one clove.

The bulb really comes into its own roasted whole. Slice about a quarter inch off the top to expose the cloves, set the head on foil, drizzle with olive oil and a pinch of salt, then wrap it loosely.

Once you break the bulb open, the loose cloves dry out faster, so use them within a week or two.
