What is all-purpose flour?

Flour is not a single ingredient. It is a category. The type you use changes everything. Texture, rise, flavor, and browning all depend on the flour. All-purpose flour is not universal. It is a compromise.

Wheat flour is ground from the endosperm of wheat berries. It contains gluten. Proteins that form a network when mixed with water. That network traps gas. That’s how bread rises. Without gluten, you get cake. With too much, you get tire.

There are three main types:

  • Bread flour: 12 to 14 percent protein. High gluten. For chewy bread, bagels, pizza crust.
  • All-purpose flour: 9 to 11 percent protein. Balanced. For cookies, pancakes, quick breads.
  • Cake flour: 6 to 8 percent protein. Low gluten. For tender cakes, biscuits, pastries.

Never substitute one for another without adjusting. A cake made with bread flour will be dense. Bread made with cake flour will collapse.

Measuring Flour

Scoop and level. Do not pack. Do not sift unless the recipe says so.

A cup of flour should weigh 120 to 125 grams. Most home scales are inaccurate. If you have a scale, use it. If not, use the scoop-and-level method.

Sifting is for aerating, not measuring. Only do it if the recipe says "sifted flour" — not "flour, sifted."

Storing Flour

Store in a cool, dry place. A sealed container on the pantry shelf is fine.

Whole wheat flour contains oils. It goes rancid in 3 months. Store it in the fridge or freezer.

White flour lasts a year. But if it smells sour or musty, throw it out. Old flour won’t rise.

Using Flour

Mix dry ingredients first. Then add wet. This prevents lumps.

Do not overmix. Stir until just combined. Overmixing develops gluten. That’s why your muffins are tough.

Let batters rest. 15 to 30 minutes. This lets the flour hydrate. The texture improves.

Substitutes

There is no true substitute for wheat flour. But if you need to avoid gluten:

Do not use cornstarch. It has no gluten. It will not bind.
