15 minTwo ingredients. That’s the whole recipe. Cube up some Velveeta, stir in Pace picante sauce, and melt it together over low heat until smooth and scoopable. This is the queso dip that shows up at every game day party and potluck for good reason: it works every single time.
The key is low heat and constant stirring. Processed cheese melts beautifully but can scorch fast if you crank the burner. Keep it gentle and the sauce comes together silky and pourable in just a few minutes.
Serve it warm with tortilla chips, corn chips, or sliced vegetables for dipping. It starts to firm up as it cools, so keep it on a warming plate or in a small slow cooker if you’re feeding a crowd.
Kitchen Tips
- Cut the Velveeta into small, even cubes so it melts quickly and uniformly. Big chunks take forever and melt unevenly.
- Stir constantly as it melts. Walk away and you’ll get a clumpy mess stuck to the bottom of the pan.
- If the dip gets too thick, stir in a splash of milk to thin it back out.
- Leftovers reheat well in the microwave in 30-second bursts, stirring between each.
