These mini lemon meringue tarts are so cute and handy, and they taste amazingly delicious, buttery shell with lemony filling, topped with fluffy meringue. They are perfect sweet treats at any occasion.
I made mine in mini pie pans and used a cream cheese/sour cream topping slightly sweetened with confectioner's sugar. The filling is excellent.
If you can't find key lime juice, use lime juice instead. The crust is buttery and flakey, the filling is creamy, lime-y and smooth, and the meringue topping is light and fluffy. Perfect balance of the flavor and the texture.
The REAL Key Lime pie. At least according to some folks. It's the one I personally prefer. (I'm a sucker for Graham cracker crust.)
Instead of a rich butter cookies, make some macaroon made of egg whites, coconut, pecans and chocolate. They are so chocolaty and delicious, a little bit crunchy at the inside and slightly chewy on the outside. Perfect sweet treats at holidays.
