Fresh and local peaches finally hit the market, we got some last week, and this is the first cake that I made with those yummy peaches. I used most whole wheat flour, 1/3 butter, 1/3 olive oil and 1/3 applesauce, which made this coffee cake super moist and delicious.
This cream cheese-based cracker spread is served free at a local pub. It was so delicious that I knew I had to try to duplicate it home after I first had it. At the pub, the spread is served with club-type crackers, but it goes well on any cracker or with crudites.
From across Northern Italy there are many variations. A rich broth, juicy Italian tomatoes and rich herb simmered for a long time. I used a mixture of sliced mushrooms from my local supermarket and dried lobster, oyster and shitake mushrooms. Then used the mushroom juice in place of chicken broth. Lovely mingle of flavours. I toasted the walnets. Used dried tarragon but soaked in the oils w/orgainc cider vinegar in advance. Oh yeah and added 1 clove of finely minced garlic. A big hit with or without the garlic. High class side dish using the fresh beans from my local country road farmer.

Ice Worms were first introduced to Upper Canada by Chatham's original settlers in the 1800's. Most Ice Worm dishes are homemade from family recipes that have been passed down for generations, and are often available for sale at local convenience stores or specialty food shops in and around the Municipality of Chatham-Kent. Although not available commercially for sale due to Health Canada restrictions on some of the ingredients (mainly the worms) you will still see Ice Worms being sold along the highways of Canada's deep south near the shores of Lake Erie, and in small communities along the Thames river around Chatham, Ontario.
