A delicious saw, love the idea of adding black bean into this crunchy and tasty slaw. The soy-ginger dressing goes deliciously well with all the veggies. A great side dish to be aside with summer BBQ.

Super quick and easy to make, instead of canned tomatoes, I used cherry tomatoes and made our own dressing and kept in the refrigerator for about 2 hours to let marinate; the flavor came out delicious, because of cherry tomatoes, it was more like a salad, definitely is a keeper.

This Korean inspired cucumber salad is sweet, sour and slightly spicy. Cucumber, sweet bell pepper, carrots and tofu sheets are tossed with rice vinegar, maple syrup, sesame oil and Korean chili pepper. A delicious and light side dish.
