These cookies with a candy bar center, from Bev Bosveld of Waupun, are packed with coconut.

Although a "soup," this dish is really a dessert. It's cold and creamy and makes a perfect ending to a summer barbeque.

Have brought this fruit salad to a few picnics, and everyone just loved it! Half way through, it was eaten up. Definitely my go-to recipe for pot-luck or picnic.
