This quick and easy Chinese stir-fry is another popular recipe in China, and you can find it in almost every Chinese restaurant. Shiitake mushrooms cooked with bok choy, stirring in some soy sauce, sugar and garlic in the end. The whole dish is fresh and tasty.

Normally, this cake is made in a bundt or tube pan. Today, I chose to make only half the recipe and bake in four ramekins for approximately 17 minutes. While the glaze was still wet, I sprinkled the little cakes with some multicolored nonpareils to make them a little more festive. Feliz Cinco de Mayo!

Fresh and local peaches finally hit the market, we got some last week, and this is the first cake that I made with those yummy peaches. I used most whole wheat flour, 1/3 butter, 1/3 olive oil and 1/3 applesauce, which made this coffee cake super moist and delicious.

A moist, lightly spiced snack cake. I have made this using butter or shortening, and both work fine. The butter method is a bit richer in flavor, though.

This quiche uses potatoes on the bottom in place of the crust. Swiss chard sauteed with garlic give the egg custard more flavor and texture. Goat cheese on top gives lovely bursts of flavor, very tasty.
