This eggplant, pumpkin and spinach vegie lasagna is a fair bit of work and takes a while - but it is absolutly worth every bit of effort. It tastes wonderful and is really healthy. It can be frozen in individual servings and will last for ages. I've taken a serve to university for lunch [where i have access to a microwave] about once a week for the last 8 weeks - all from the one batch. Fantastic :D

Made this pasta with veggies for supper yesterday, and I was impressed. I wan't sure that if there would be enough flavor, and it actually came out quite tasty. I did add a bit hot chili sauce. A quick, easy and yummy one-pot meal.
This is an excellent recipe, low in fat and full of fibre.
About half of the beans I used were chili beans. And I used a Guinness beer. I (roughly) seeded the jalapenos and this was surprisingly still spicy. A cheap cut of beef works quite well; the beef chunks get so tender and this is an overall delicious dish. I froze half of it.
