This Pasta Salad with Cucumber, Tomato, and Feta was not something I had planned on blogging about. It merely came about because I had nothing to cook for dinner, save a package of gluten-free pasta I had picked up for emergencies and a variety of veggies from my CSA. Then my husband loved it so much that he had two helpings, and he insisted that I write about it. I’m trying to move my family towards a more grain-free existence, but sometimes I just don’t have it in me to think gourmet. Sometimes, we do the best that we can. All this is my way of saying that the amounts of ingredients here are really just approximations. I have no idea what exactly I put in here to make it taste so yummy. You’ll have to channel your inner Italian grandma, and just mix in ingredients until the food tastes good.
Made this Italian grilled cheese with 15-minute tomato soup (see the linked recipe below) for lunch, and what more can I say other than delicious. Grilled cheese and tomato soup are a classic pair, so it always a winner.
I put it on lettuce, eat it with pita chips, or serve it with meat. Always have some plump kalamatas on hand when eating it. So delicious to dunk them in the sauce.

I got this recipe out of a magazine a few years back and I have made it a lot. The person who submitted it said it won her a blue ribbon, she also said she was a six-time Pillsbury Bake-Off finalist. I had no way to confirm this but the recipe sounded good and when I tried it I loved it.

great dish when it is hot outside and/or inside.. sometimes a main dish with separately served potatoes, often with meat or sausages.. I like to serve it as a side dish to grilled food.. similar to Lithuanian chilled beat soup, which is fantastic, however they add a lot of cream, hard boiled eggs and do not add radish rather..
