Monika's Black Tea & Date Bread
Monika's Black Tea & Date Bread

This recipe isn’t mine. It belongs to Monika, who lives in Hagen, Germany. I asked her to share the recipe around the world because her bread is delicious, and she gave me her approval. This bread is sweet but not too sweet, any salt at all, fine as a dessert, fits to milk soups (photo #9).

One bowl has only 264 calories, 19g of protein, 16g fibre, and is high in folate, magnesium, vitamin B, iron and potassium. What’s not to love? We like to serve this with a slice of our delicious wholemeal spelt bread.

Cheddar & Dill Cornbread
Cheddar & Dill Cornbread

Delicious cornbread, and the texture was great. I used whole wheat flour, and the bread still came out soft and fluffy. Used 2 large eggs instead of 3 egg whites, 2% milk, and 2% yogurt instead of fat-free version, which definitely gave the cornbread a richer taste. Served it with homemade kale, potato and white navy bean soup. A delicious and hearty meal.

Gluten-Free Rustic Bread
Gluten-Free Rustic Bread

A great gluten-free recipe for a daily staple that has other benefits too. Sorghum is an important grain because it gives an alternative to wheat for those who need a gluten-free diet, it is usually eaten as a whole-grain which keeps the hull and its’ nutrients intact. Sorghum contains selenium and niacin which are thought to help in the prevention of cancer. Flax seeds are especially good for digestion because of its’ mucilage gum content which forms like a gel in the intestinal tract, while cider vinegar is proven to improve insulin sensitivity and to reduce blood sugar levels for those with Type 2 diabetes. For those bread lovers out there, here is a great excuse to have a healthy egg on toast for breakfast, a healthy fish and salad sandwich for lunch and a healthy bean and vegetable soup with a chunk of this tasty rustic bread for dinner. You’ll know which side of your bread is buttered with this recipe!

Prairiehare's French Onion Soup
Prairiehare's French Onion Soup

A very simple recipe for a classic, which helps you to get warm in the winter (ok, I mean when it is getting 4° Celsius in the night in Southern California). The number of servings is accurate when you have it as a meal - as a starter it should serve way more people. I did not list any spices, as I usually have self made chicken broth which is already pretty tasty and spicy, sweetness comes from the onions and the white wine balances it. For bread and cheese - don't think about any fancy, old dry bread is good and any cheese which melts. The onions are king when it comes to taste. Ovenproof crock bowls are very nice for final preparation and serving the soup.

Rye Bread with Onions & Caraway
Rye Bread with Onions & Caraway

Excellent bread. Nice, light texture and good crust. I will add more caraway next time, though, as we really like that flavor. I doubled the recipe to make a large loaf, and it worked fine. I usually just use my machine for the kneading process and than finish the loaf by hand, but let the machine do the whole thing this time, since I was busy all day. Made the house smell great, and was perfect with a steaming bowl of split pea soup! Thanks for this keeper.

Acquacotta
Acquacotta

We have the Italians to thank for bringing this humble soup into our kitchens. Originating in Tuscany centuries ago as a means for the poor to use up stale, leftover bread. Today, we are just grateful that we have a hearty, tasty way to use up leftover ingredients that create a deeply-satisfying meal that is not only well-balanced and healthy, but simple to throw together. While it may not have been a dish for the wealthy, we think you will be peasantly surprised.
