Watermelon, Arugula and Feta Salad
Sweet-juicy watermelon cubes, peppery arugula leaves, salty and creamy feta cheese are tossed with a light balsamic-olive oil vinaigrette. A great summer salad that adds some refresh-ness to your BBQ.
|For the vinaigrette|
salt and black pepper
|For the salad|
cut into 2-inch cubes, cold
pitted and sliced
washed and dried, 8 cups
Add dressing ingredients into a small bowl, whisk until well blended.
Keep dressing refrigerated until ready to use.
Combine watermelon, feta cheese, olives and arugula in large bowl.
Pour dressing over salad.
Gently toss until evenly coated and well combined.
