30 minGround turkey gets a serious upgrade when mushrooms pull double duty in both the patty and the sauce.
Half the sliced mushrooms sauté with onion and get folded right into the seasoned turkey mixture with Italian herbs and egg. Those patties broil up golden while the remaining mushrooms simmer in dry red wine with cracked black pepper.
Spoon that wine-dark, earthy sauce over the patties and dinner is served. Thirty minutes, start to finish.
Chef Tips
- Mix the sautéed mushrooms and onion in gently so the patties stay tender, not dense
- Don’t press the patties while broiling or you’ll squeeze out the juices
- Use a full-bodied dry red wine for the sauce; it reduces into something rich and glossy
- Serve alongside mashed potatoes or egg noodles to soak up every drop of sauce
