Ingredients

200 cloves garlic
fresh
1 medium onions
diced
1 each sweet red bell peppers
diced
1 ¼ cups apple cider vinegar
¼ cup ginger
fresh, minced

1 tablespoon mustard seeds
1 teaspoon salt
¼ teaspoon red pepper flakes

Directions

Coarsely chop garlic.

Combine all other ingredients in a medium saucepan and bring to a slow boil.

Reduce by ⅓, add garlic and cook about 10 minutes.

Cool and serve.
