Steamed Pumpkin & Baby Bok Choy with Ginger Sesame Sauce

Containing a wealth of vitamins C, A, and K, as well as calcium, magnesium, potassium, manganese, and iron, bok choy is a very nutritionally dense vegetable. Vitamin A, for instance, is essential for a properly functioning immune system, while vitamin C is an antioxidant that shields the body from free radicals. Bok choy supplies potassium for healthy muscle and nerve function, and vitamin B6 for carbohydrate, fat, and protein metabolism.

Directions

In a small saucepan or frying pan, whisk together the olive oil, sesame oil, tamari, grated ginger and garlic and red chilli flakes.

Heat gently until warm, cover and set aside.

Prepare a bamboo steamer - Add the pumpkin slices and steam until tender.

Remove the pumpkin slices and place on a large platter.

Add the bok choy to the steamer basket and cover and cook until tender.

Transfer bok choy to the serving platter; drizzle with the reserved ginger sesame mixture, top with toasted sesame seeds and serve immediately.
