Directions

To make the spinach pesto:

In a food processer, add all the ingredients.

Process until smooth, season with salt and black pepper to taste.

It can be kept in the well-sealed jar in the frige for a week.

To make the grilled cheese sandwich:

Butter one side of flour bread slices.

Spread 3 tablespoons of spinach pesto on two slices of non-buttered side.

Place ½ cup of cheese over the spinach pesto.

Top with the remaining bread, buttered side up.

Heat ½ to 1 tablespoon of butter in a large nonstick skillet until melts and hot.

Place two sandwiches, buttered side down in the skillet.

Cook until the cheese melts and the bread is golden brown on each side, about 3 minutes per side.

Serve warm with tomato soup if desired.
