60 minThis is old-fashioned Jello salad at its most nostalgic. Red hot cinnamon candies melted into boiling water give the gelatin its signature pink-red color and that warm, spicy bite that sets this apart from every other molded salad on the potluck table.
Lemon Jello mixed with applesauce and a squeeze of lemon juice creates an apple-forward base with just enough tartness to balance the candy sweetness. The applesauce also gives the set gelatin a slightly opaque, creamy look rather than the clear wobble of plain Jello.
The cream cheese topping is the finishing touch. Softened cream cheese beaten smooth with evaporated milk spreads into a tangy, creamy layer on top that contrasts beautifully with the spicy-sweet gelatin below. Cut it into squares for clean, neat servings.
Kitchen Tips
- Stir the cinnamon candies in boiling water patiently. They take several minutes to dissolve fully, and any undissolved bits will create grainy spots in the finished salad
- Make sure the Jello mixture is fully cooled before refrigerating or it may set unevenly
- Soften the cream cheese completely at room temperature before mixing so the topping stays lump-free
- A 9×13 pan works well for this if you want thinner squares that set faster
Variations
- Fold in chopped pecans or walnuts before chilling for a crunchy texture
- Use cherry Jello instead of lemon for a deeper fruit flavor
- Top with a sprinkle of ground cinnamon instead of the cream cheese layer for a lighter finish
