Directions
Stuff goose, salt and pepper skin, prick well, and tent with tin foil.
Roast at 375℉ (190℃) F for 4 hours.
Remove tent and cook 30 minutes more.
Cook rice until done.
Sauté celery and onion in butter.
Mix all ingredients and stuff goose.
