40 minThese peanut bean burgers get a serious upgrade with a from-scratch satay sauce that brings the heat and the umami. Chopped peanuts pulsed into the patties at the very end stay crunchy and give each bite a toasty snap against the softer bean base.
The satay sauce comes together in one pan. Onion, garlic, and chili pepper sweat in sesame oil until soft, then chunky peanut butter melts into the mix. Teriyaki sauce, brown sugar, tomato paste, and tahini round it out into something thick, savory, and just slightly sweet.
Ginger replaces oregano in these patties, shifting the flavor profile from Mediterranean toward Southeast Asian. That warmth in the background connects the burger to the sauce in a way that makes the whole plate feel intentional.
Pro Tips
- Use natural chunky peanut butter for the sauce. The commercial sweetened kind throws off the balance and makes it cloying.
- Simmer the sauce the full 10 minutes. It needs time to thicken and for the flavors to come together.
- Don’t over-process the peanuts into the patties. You want visible chunks, not peanut dust.
- Grill the patties over medium heat. High heat chars the outside before the center sets, and they’ll fall apart.
Variations
- Add a squeeze of lime juice and a handful of chopped cilantro to the sauce right before serving for brightness.
- Swap the chili pepper for sriracha if you want more controlled heat.
- Serve in lettuce wraps instead of buns with shredded carrots and cucumber for a lighter, gluten-free option.
