Pasta with Mushroom-Pea Marinara Sauce

Something quick, easy and tasty is always great for a busy week-night meal. This pasta with mushroom pea marinara sauce can be done within 20 minutes. It’s loaded with yumminess and it’s good for you.

Ingredients

OUNCES ML/G SPAGHETTI
or more as need, preferably whole wheat

TABLESPOONS ML OLIVE OIL

EACH EACH ONIONS
chopped

CLOVES CLOVES GARLIC
peeled and minced

CUPS ML MUSHROOMS
button or cremini, sliced, fresh or canned, drained

EACH EACH CARROTS
peeled and cut into 1/4-inch cubes

CUP ML PEAS, FROZEN
or fresh *

CUPS ML TOMATO SAUCE
or more or less to your desired consistency

Directions

Bring a large pot of salted water to a boil.

Cook the pasta to desired consistency, 10 to 13 minutes.

Drain well and return the pasta to the pot.

Meanwhile heat the olive oil in a medium nonstick skillet over medium heat until hot.

Add the onions, stirring often, and cook for about 5 minutes, or until the onions are soft and partially browned.

Stir in the garlic mushrooms, and cook for another 5 minutes or so, or until the mushrooms are browned, and some of the liquid has evaporated.

Add the carrots, and cook 2 minutes. Stir in the peas, and cook through, another 2 to 3 minutes.

Pour the tomato sauce into the pan, and bring to a boil.

Season to taste with salt and black pepper.

Pour the sauce over the pasta in the pot, and toss until evenly coated and combined.

Divide among serving plates. Top with parmesan cheese.

Serve warm.
