Pantry-staple noodles and canned green beans get bound by a quick stovetop cheese sauce, baked in an individual casserole until the top browns into something that smells better than its parts.
Melting the cheddar in milk over low heat creates a quick mornay-style sauce without bothering with a roux. The key is keeping the heat low; cheese seizes and turns grainy if rushed over high heat. Cube the cheese small so it melts evenly, and stir constantly until smooth.
Canned green beans work as written, but if you have fresh or frozen green beans, they will hold their texture and flavor better. Canned beans are softer and saltier; rinse them well if going that route.
Don’t skip the paprika dust. A teaspoon’s worth on top in the last minutes of baking turns into a subtly smoky crust that contrasts with the rich, creamy interior. It also gives the dish a beautiful warm color instead of just beige.
The 25-minute bake is calibrated for the noodles to absorb sauce and the top to brown. If using rice (the recipe’s note allows it), the bake works just as well; rice tolerates the sauce even better than noodles.
