3 hrsLaura’s Golden Graham drops are a four-ingredient no-bake treat that lands somewhere between a cookie and a candy cluster. Melted chocolate chips and peanut butter make a glossy binder that hugs honey-graham cereal squares and pillowy mini marshmallows.
The trick is letting the chocolate-peanut mixture cool just slightly before adding the marshmallows. Too hot and the marshmallows melt into puddles. Just warm enough and they stay round, soft, and visible in every cluster.
These set up firm in the fridge in under an hour and stay snackable for a week in a tin (if they last that long). They are exactly the kind of cookie kids can make with minimal supervision and zero oven access.
Kitchen Tips
- Melt the chocolate and peanut butter together in 30-second microwave bursts, stirring between each. A double boiler works too, just don’t let any water hit the chocolate or it will seize.
- Use a cookie scoop or two spoons to drop uniform mounds. Even sizing means even setting time and a more polished tin.
- Refrigerate on a parchment-lined sheet, not stacked. Stacked clusters fuse together as they firm up.
Variations
- Swap Golden Grahams for rice krispies, Cheerios, or chow mein noodles for a different crunch.
- Use cookie butter or Nutella in place of the peanut butter for a nut-free or hazelnut twist.
- Stir in a half cup of toasted coconut or chopped pretzels for salty-sweet contrast.
