30 minThese savory Sri Lankan fritters pack serious flavor from a batter spiced with garam masala, chili powder, and black pepper, studded with shredded cabbage and carrots for crunch.
Gram flour (chickpea flour) creates a light, crispy exterior when fried, while the vegetables stay tender inside.
Perfect as an appetizer with cooling yogurt sauce or chutney, these fritters are best served immediately while the coating is crackling and hot.
Kitchen Tips
- Don’t make batter too thick - it should drop from a spoon but hold together
- Heat oil to 350°F before frying so fritters crisp up without absorbing excess oil
- Fry in small batches to maintain oil temperature and prevent sticking
- Drain on paper towels and serve immediately for maximum crispiness
