Grilled New Potato & Parsley Salad with Lemon-Garlic Mayonnaise

Grilled new potatoes are tossed with lemon-garlic mayonnaise and fresh parsley leave. Creamy, garlicky, and refreshing are in one bite. A nice accompaniment with any BBQ main course.

POUNDS KG NEW POTATOES
small and new
1 ⅓ 315
CUPS ML MAYONNAISE
good quality, or you can use half yogurt or sour cream to replace half mayonnaise

or to taste, chopped

TABLESPOONS ML LEMON JUICE
fresh

TEASPOONS ML LEMON ZEST
freshly grated

minced, or finely chopped

Directions

Add potatoes in dutch oven or large saucepan and cover with cold water.

Bring to boil, season water with salt, and cook until slightly tender, 10 to 15 minutes.

Drain potatoes in colander in sink, and let enough to handle, half the potatoes.

Preheat grill to medium.

Add mayonnaise, garlic, lemon juice, and zest to a food processer and process until smooth.

Season with salt and pepper. Set aside.

Brush potatoes with oil and sprinkle with salt and pepper.

Grill, cut side down, until golden brown and just cooked through, 2 to 3 minutes on each side.

Place grilled potatoes onto serving platter.

Drizzle garlic-lemon mayonnaise over potatoes and sprinkle with fresh parsley.

Serve and enjoy!

It can be served at room temperature or chilled.
