25 minFried bananas with honey are one of those desserts that prove simple can be spectacular. Banana quarters get rolled in flour, dipped in a baking powder paste, and deep-fried until the coating puffs up golden and crispy while the fruit inside goes soft, warm, and caramelized.
The baking powder mixed with water creates a thin batter that reacts with the hot oil, forming tiny gas bubbles that give the coating its light, airy crunch. It’s not a heavy beer-batter style shell but a delicate, almost tempura-like crust. A drizzle of honey over the hot-from-the-fryer pieces soaks into the cracks and adds a floral sweetness that pairs naturally with banana.
Kitchen Tips
- Use firm bananas that are just barely ripe. Overripe bananas turn mushy inside the hot oil and fall apart.
- Get the oil properly hot before frying. If the oil isn’t hot enough, the coating absorbs grease instead of crisping.
- Fry in small batches so the oil temperature stays consistent. Crowding drops the heat and gives you soggy results.
- Drain on a wire rack, not paper towels. A rack lets air circulate underneath so the bottom stays crisp.
Variations
- Sprinkle with cinnamon sugar instead of honey for a churro-inspired version.
- Serve with a scoop of vanilla ice cream and a drizzle of chocolate sauce.
- Roll the battered bananas in sesame seeds before frying for extra crunch and a nutty flavor.
