This pink grapefruit frosting is a seven-minute style that’s all air and citrus. Egg whites, sugar, corn syrup, and grapefruit juice get beaten together over a double boiler until the mixture transforms from a loose, foamy liquid into tall, glossy peaks that hold their shape.

Seven-minute frosting is a different animal from buttercream. There’s no butter at all. The texture is more like marshmallow fluff: light, billowy, and almost cloud-like on top of a cake. The grapefruit juice gives it a subtle tart edge that cuts through the sweetness and keeps it from being one-note sugary.

A few drops of red food coloring turn it a soft, pretty pink, though you could skip that entirely and let the frosting stay white. The vanilla goes in after you pull it off the heat, so it doesn’t cook out.

Use this frosting immediately. It sets up fast once it stops being heated, and trying to spread it after it firms is a losing battle.

Kitchen Tips

  • Make sure your bowl and beaters are completely grease-free. Even a trace of fat will prevent the egg whites from whipping properly.
  • Keep the water at a steady boil underneath, not a gentle simmer. You need consistent heat to cook the egg whites safely while they whip.
  • Test for doneness by lifting the beaters. The frosting should form soft peaks that droop slightly at the tip.
  • Spread onto a fully cooled cake. Hot cake will melt the frosting right off.

Variations

  • Lemon version: Swap the grapefruit juice for fresh lemon juice and skip the food coloring for a bright white lemon frosting.
  • Blood orange: Use blood orange juice for a naturally deeper pink color without food coloring and a sweeter citrus flavor.

Directions

In the top of a double boiler, combine all the ingredients except vanilla and food coloring.

Place over boiling water and beat with an electric mixer about seven minutes or until frosting will stand up in soft peaks.

Remove from water and beat in vanilla and food colouring.

Use immediately.
