Seven-minute frosting is a different animal from buttercream. There’s no butter at all. The texture is more like marshmallow fluff: light, billowy, and almost cloud-like on top of a cake. The grapefruit juice gives it a subtle tart edge that cuts through the sweetness and keeps it from being one-note sugary.
A few drops of red food coloring turn it a soft, pretty pink, though you could skip that entirely and let the frosting stay white. The vanilla goes in after you pull it off the heat, so it doesn’t cook out.
Use this frosting immediately. It sets up fast once it stops being heated, and trying to spread it after it firms is a losing battle.

Directions
In the top of a double boiler, combine all the ingredients except vanilla and food coloring.
Place over boiling water and beat with an electric mixer about seven minutes or until frosting will stand up in soft peaks.
Remove from water and beat in vanilla and food colouring.
Use immediately.
