Emergency Bread
This turns out similar to pita and takes about 10 minutes to have ready. Perfect when in a pinch and perfect for use in soups or dips.

Directions
Preheat oven to 400℉ (200℃).
Sift the flour and salt together into a bowl.
Mix together the oil and water. Add ⅔ to the flour and mix well. Continue to add the water/oil mixture until the dough holds together and no longer sticks to the sides of the bowl. It should not become too sticky.
On a floured surface, knead the dough for about 2 to 3 minutes until just becoming smooth and elastic.
Roll out to about ¼ inch thick, prick (dock) with a for all over, scatter with sea salt and black pepper to taste.
Drizzle with some olive oil and cut into desired shapes, strips, circles or squares.
Place on a lightly greased baking sheet and bake for 5 to 7 minutes or until just beginning to achieve some color.
Variation: Add some flavor to the dough such as dried thyme, paprika, garlic powder, chopped black olives or a bit of grated cheese.
