15 minA curried turkey sandwich is what you reach for on day three of leftovers, when plain mayo and lettuce have lost their charm. Diced cooked turkey gets folded with crunchy celery, crisp apple, and chopped scallions, all bound in a light yogurt-and-mayo dressing that’s been warmed up with curry powder and a squeeze of lemon. The result lands somewhere between classic British coronation chicken and a chunky Waldorf: creamy, sweet, savory, and bright all at once.
Piled between slices of toasted whole wheat bread with the crusts trimmed off if you’re feeling fancy, it makes a tidy lunchbox or tea-time bite. The curry doesn’t shout, it just hums in the background, tying the apple and turkey together.
Kitchen Tips
- Use a crisp, sweet-tart apple like Honeycrisp, Granny Smith, or Fuji. Mealy apples turn the filling mushy.
- Toss the diced apple with the lemon juice before mixing to keep it from browning in the fridge.
- Toast the bread lightly so it holds up to the moist filling without going soggy.
Variations
- Swap turkey for leftover rotisserie chicken, or canned chickpeas for a vegetarian version.
- Stir in a spoonful of mango chutney or a small handful of golden raisins for sweetness.
- Serve the filling on butter lettuce cups instead of bread for a lower-carb lunch.
